Sourdough Buckwheat Waffles

I lifted the original recipe as a base from Eric Rusch at Breadtopia. I made up my own buckwheat waffle mix which is very cost effective. I changed some of the ratios and techniques. These waffles are consistent in texture, flavor, and yield. The buckwheat waffles and all purpose flour pancakes both freeze well.

My sister is a diabetic and these buckwheat waffles have a low glycemic index that keeps her blood sugar rising slowly. She incorporated the waffles into a hearty breakfast with an egg, turkey sausage, fruit sauce, flax meal, and green tea on the water aerobic mornings and her blood sugar doesn't spike or crash.

Buckwheat Waffle Mix:

1 cup all purpose flour, 1 cup buckwheat flour, and 1 tablespoon baking powder. Whisk well. Continue with the flours, baking powder, and whisking until you have your desired amount. Keep in an airtight container.

By the way, buckwheat is not a grain despite having wheat in the name. The flour is derived from seeds.

Sourdough Buckwheat Waffles:

1 cube of butter

1 1/4 cups milk

1 tbsp brown sugar

1 cup sourdough starter

1 1/2 cups buckwheat waffle mix


Heat butter, milk, and brown sugar until butter is melted. Cool to room temperature.

Mix all ingredients , cover tightly with plastic wrap and let sit on counter overnight.


In the Morning:

Preheat waffle iron.

Whisk 2 large eggs with 1 tsp salt and 1/4 tsp baking soda.

Stir into overnight mixture. Mix well and bake in heated waffle iron for 6 minutes. Newer waffle irons may take less time. Bake until they stop steaming.


Optional:

Whisk egg yokes, salt , and soda into overnight mixture. Beat egg whites until stiff and fold into batter.

I use this same recipe with all purpose flour for pancakes. The folded in egg whites make a light and spongy pancake.

I stick to waffles for the buckwheat because it makes a heavy pancake. I know this..........just not enough batter to fill the waffle iron, but enough to make 1 pancake. A very heavy pancake.
