Northwest Apple Pudding

Long long ago, when we were very young, my sisters and I would visit a little old lady that lived alone at the end of our road. She was lonely and fed us like we were young robins. I loved this particular treat and asked if we may have the recipe.

Ingredients:

1 c sugar

1/4 c butter

1 eggs

2 c grated apple

Instructions:

1 c flour

1tsp soda

1 tsp cinnamon

3/4 tsp nutmeg

1/4 tsp salt

1/2 c chopped nuts

Cream sugar& butter. Beat in eggs. Add grated apples. Whisk flour & spices. Add and beat till smooth. Mix in nuts. Put in greased loaf pan. Bake at 350 degrees 45 minutes. Serve warm with whipped cream or thin hot pudding sauce.

Note: A sweet/tart apple works best. Try using Braeburn. You won’t get the flavor that becomes addictive if you use tart apples like Granny Smith.
