Magic Potato Salad

To make a long story short, I took care of a woman that had raised 10 children on a mountain ranch. No power or running water. Toward the end they had power and running water in their cabin. Thank God. They raised black angus cattle and I swear they milked them. Have never in my life before or since seen the amount and texture of the cream when they put the milk in the separator.
So………when she made the best potato salad I ever threw my mouth over, I asked her what she put in with the mayonnaise. Indignant doesn’t cover it! “I don’t use mayonnaise, just cream,” she snarled.

There isn’t a recipe for this so I will give a ratio. Use it to guide your volume for how many servings you want.
2 baked Yukon Gold Potatoes (medium size)
1 hard boiled egg
Green onion to taste
Salt and pepper
Cream (not half an half)
Don’t drown it in cream at first. Make this the day before for flavors to blend and add more cream if it is dry. Baking the potatoes enriches the flavor.
