Porcupine Meatballs

The Great Depression is a misunderstood catch phrase. It was the worst global economic downturn in the history of the industrialized world. In 1929 the catalyst began in the united states with the stock market crash. Then came the panic and millions of investors were wiped out. Banks failed and unemployment rose to record highs. It spread around the globe. The population learned to make do with nearly nothing.

That said, one of the ways meat was stretched to go farther was to add rice.

Porcupine Meatballs:

1 pound lean ground meat

1 large onion chopped

3 cloves of garlic finely minced

1/2 cup long grain rice

1/2 cup water

1 teaspoon salt

1/2 teaspoon course black pepper

2 14 ounce cans tomato sauce

2 teaspoons worcestershire sauce


Directions:

Preheat oven to 350 degrees. Lightly grease a 9X13 pan.

In a large bowl Place ground meat, onion, garlic, rice, water, salt and pepper Mix well.

Form into 1 1/2 inch meatballs (about 2 tablespoons each). Wet hands to keep mixture from sticking. Place meatballs in the baking pan. There should be about 18.

In a bowl, stir worcestershire sauce 1/2 teaspoon of salt, and 1/2 teaspoon pepper into the tomato sauce. Pour tomato sauce over the meatballs. Cover with foil

Bake 35 minutes. Uncover and bake for another 15-20 minutes.
