My first pearl of wisdom will fall under useful information. I discovered a post where someone was told to get a kitchen scale. Didn't have a clue what that meant. "So where are the weights in recipes?" A rule of thumb is to measure, weigh and write it down. Only have to do it one time for any recipe. ************************************************************************************************************************
Time Saver Pie Crust Shortcut:
Weigh ingredients!
For each cup of flour in recipe, fill with a spoon, scrape level with a knife, and dump into bowl. For shortening fill the cup and mash out all the bubbles, add more, mash out bubbles, add more level, and dump in bowl. This takes a lot of time. To weigh the flour, put bowl on scale, set to 0, measure out all the flour in the recipe and write down the total weight in your recipe behind flour. For the shortening, put a piece of wax paper on the scale, measure all the shortening in a cup, mash bubbles, etc and and dump onto the wax paper. Write down the total weight the shortening in your recipe behind shortening. Next time you bake you are good to go. It’s no problem to use a knife or spatula to load the shortening onto the wax papers sitting on the scale. I love it
