Pearl of wisdom #2 falls under the old indian trick. Very secret and very very useful

The Kitchen Aid Whip Trick:
We made the best apple pies in a church kitchen, then sold them at farmers markets and festivals. I would make a four crust batch at a time cutting in the shortening with a pastry blender, then stir in the egg, vinegar, and water mixture. Of course I had been doing weights by this time. I was sharing my procedure with the meat vendor and he told me about how he makes hundreds of biscuits for the Hippie Festival. Use your Kitchen Aid Whip attachment to cut in the shortening. And I said, "Say what?". He told me to just do it. So I did. I was able to cut shortening into eight crust batches of flour in a matter of seconds. Take off the whip attachment and put on the dough hook to mix in the egg, vinegar, and water. The Wow Factor as off the charts, as we baked ten pies at a time.
You see vendors are required to use commercial kitchens if they are selling foodstuff to the public. No cooking at home. The kitchens are rented by the hour so time is of the essence.
