Don't let a little thing like arachnophobia get in your way with this recipe. It has nothing to do with those creepy crawlies. Nor is it about the spidery veins of cream. The name is derived from the cast iron vessel with three legs called the spider that was used in the 1800s to cook over coals in the hearth. A lot of the recipes I stolen have great stories. I have to learn how to do podcasts so I can read them to you. In the meantime go to the web page listed below and read for yourself .

New England Spider Cake:
Ingredients:
2 tablespoons plus extra to grease the skillet
2 cups whole milk
1/2 cup sugar
2 large eggs
1 & 1/2 teaspoons white vinegar
1 cup all purpose flour
3/4 cup yellow cornmeal
1 teaspoon baking powder
1/2 teaspoon soda
3/4 teaspoon sea salt
1 cup heavy cream
maple syrup
Directions:
Heat oven to 350 degrees with a buttered 10 inch cast iron skillet inside. Melt 2 tablespoons of butter and let cool.
Mix thoroughly milk, sugar, eggs, white vinegar, and melted butter. Whisk together dry ingredients. Add dry ingredients to liquid ones. Stir until smooth. Batter will be thin. Let rest for 5 minutes
Remove Hot skillet from the oven. Pour in batter. Pour the cup of heavy cream directly into the center. Place in the oven and bake until the cake is deep gold and pulling away from the sides of the skillet. 50-60 minutes.
Cake will still jiggle a bit on top and may have a few cracks. Let coll slightly before slicing or spoon from skillet. Drizzle with maple syrup
